Magic Chocolate Pudding...

34 Oh my goodness... we stumbled upon quite the recipe this evening.

Each Sunday in Africa, we typically do one meal in the early afternoon, and for dinner we break out the stovetop popcorn. It's a really fun tradition started long before our family -- probably originating with the Rodgers' fam (at least that's where we learned it!).

Today I pulled out the cornflour (cornstarch) to thicken up a soup I was making, and I noticed a recipe for "Magic Chocolate Pudding" on the back of the pouch. And so it went tonight... popcorn and pudding. FYI -- the term "pudding" is used over here to refer to some sort of dessert.

If you're looking for a lovely chocolate fix, this is it. I've even included conversions to regardless of where you are in the world, you can try this -- assuming you have the ingredients. :)

MAGIC CHOCOLATE PUDDING

-100g/1 cup self-raising flour
-100g/1 cup butter, softened
-100g/1 cup castor (superfine) or icing (powdered) sugar
-2 eggs
-4 teaspoons cocoa powder

-75g/three-quarter cup castor or icing sugar
-2 teaspoons cornflour (cornstarch)
-4 teaspoons cocoa powder
-boiling water

Preheat oven to 190°C/375°F. Place flour, butter, one cup of sugar, cocoa powder, and 2 eggs in a bowl of mixer. Mix or hand whisk together to make a soft dropping consistency. Place in a greased pie dish. Meanwhile, mix 4 teaspoons cocoa powder with two cups boiling water, and add remaining sugar and cornflour. Whisk until smooth, and gently pour over pudding mixture in a dish.

Bake for 25-30 minutes. The pudding will be firm on the top (like a cake) and the sauce will be on the bottom. Serve with custard, cream, or ice cream.

Note: I doubled the recipe and it baked well in a 9X13 pan.
