-1 1/2 cups oatmeal, food processed until fine
-1 1/2 cups whole wheat flour
-2 teaspoons baking soda
-1 teaspoon baking powder
-1/2 teaspoon salt
-3 tablespoons chopped walnuts, optional
(combine above dry ingredients, set aside)
-1 1/2 cups buttermilk
-1 cup milk
-1/4 cup oil
-1 egg
-1/3 cup sugar
(mix wet ingredients until smooth, and add to dry ingredients, stirring until just combined)
That's it -- that's all. This will yield approximately 12 pancakes. I guarantee you'll want to double this recipe -- freeze the rest and warm them in the oven to crisp them up. Let me know what you think.
PS -- The pan holding the pancakes has been such a blessing to us, and will never leave my kitchen going forward. When Ben and Susan Rodgers (and kids!) left Swaziland in March 2011 to return to the States, Sooze handed this pan to me and told me about its history. It's been around forever -- she said that her grandfather had sold WearEver and this is a piece that had been with them. It's durable, heavy, and has so much character. It's such a blessing... so much nostalgia. It's an honor to use it!
